Slow Cooker Osso Bucco

Crockpots are the easiest way to make dinner for a family without the hassle. With a prep time of 20 minutes and a cook time of 6.5 hours in the crockpot, dinner has never been so easy!

If you haven’t had Rose Veal before, it has a delicious light beef flavor. It can be substituted in many recipes in place of regular beef or even pork!

Here is our favorite crockpot Rose Veal Osso Buco recipe:


  • 3 lb Rose Veal shanks
  • Salt and pepper
  • 4 tbsp unsalted butter
  • 1 cup of vermouth or dry white wine
  • Flour for dredging
  • 1 lb crushed tomatoes
  • ¼ lb carrot, medium dice
  • ¼ lb celery, medium dice
  • ½ lb red onion, medium dice
  • 1 cup veal stock
  • ¼ cup parsley, chopped
  • 5 sprigs of fresh thyme
  • 2 large cloves garlic, crushed with the flat of the knife
  • 2 tsp lemon zest
  • 1 tbsp garlic, grated
  • 1 tbsp lemon zest, grated
  • 1½ tbsp Italian parsley, finely chopped

How to Prepare It

Get your crockpot out, it’s time to cook!

Season your Rose Veal shanks with salt and dredge in flour. Gently shake off the excess flour.

Heat the butter in a hot skillet, sear the meat on all sides for four minutes per side, and then set aside.

Take the chopped carrots, celery, and onion, and lay them evenly in the bottom of your crockpot. Lay the shanks on top of the vegetables in the crockpot.

Deglaze the skillet with vermouth or wine, scrape all contents of the skillet into the slow cooker. Add the rest of the ingredients, except for
the gremolata, to the slow cooker.

Cook in the crockpot on low for 6.5 hours, or until the veal is 145 degrees Fahrenheit, and the meat is falling off the bone

Prepare the gremolata by removing the parsley from the stem and finely chopping the parsley. Grate the garlic and the sets of the lemons.

Add together and continue chopping to combine. Add salt and pepper to taste.

Dress the Rose Veal with the gremolata to serve. Serve the rose veal with any greens, potatoes, other carb of your choice.
