Classic Rose Veal Stew Recipe:
Ingredients:
- 2 pounds rose veal, cut into 1-inch cubes
- 2 tablespoons all-purpose flour
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1/2 cup white wine
- 2 cups beef or chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 2 tablespoons fresh parsley, chopped
Instructions:
- Season the veal cubes with salt and pepper, then coat lightly with flour.
- Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the veal cubes in batches, ensuring they develop a nice golden crust. Remove and set aside.
- In the same pot, add the chopped onions, carrots, and celery. Sauté until the vegetables begin to soften, about 5 minutes.
- Add minced garlic and cook for another minute.
- Pour in the wine, scraping the bottom of the pot to release any browned bits.
- Return the veal to the pot. Add broth, bay leaves, and thyme.
- Bring to a simmer, then reduce heat to low. Cover and cook for about 1.5 to 2 hours, or until the veal is very tender - between 145-160°F.
- Remove bay leaves, adjust seasoning to taste.
- Garnish with fresh parsley before serving.
Serve hot with crusty bread, over egg noodles, or with mashed potatoes. This classic stew is rich, hearty, and perfect for a comforting meal.
