This 2–3 lb. bone-in Rose Beef chuck roast from Kentucky family farms is ideal for slow cooking, braising, or pressure cooking. Pasture-raised responsibly without antibiotics or growth hormones, this veal chuck roast becomes tender and flavorful when cooked low and slow.
Simply prepared, this roast offers a satisfying way to enjoy locally raised, quality meat at home.
Classic Veal Chuck Roast Recipe:
Ingredients:
- 2-3 lb veal chuck roast
- 2 onions, chopped
- 4 garlic cloves
- 2 carrots, diced
- 2 celery stalks
- 1 cup dry white wine
- 2 cups beef stock
- Fresh rosemary and thyme
- Salt and pepper
- Olive oil
Method:
- Season roast with salt and pepper
- Sear in hot pan until browned
- Remove meat, sauté vegetables
- Deglaze pan with wine
- Add stock and herbs
- Return roast to pan
- Cover, braise at 325°F for 3 hours
- Rest 15 minutes before serving
- Slice against grain
