Classic Braised Grass-Fed Veal Brisket Recipe:
Ingredients:
- 3-4 lb grass-fed veal brisket
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 cup red wine
- 2 cups beef stock
- Fresh thyme
- Salt and pepper
- Olive oil
Instructions:
1. Season brisket with salt and pepper
2. Sear meat in hot pan until browned on all sides
3. Remove meat, sauté vegetables in same pan
4. Add wine, stock, and thyme
5. Return brisket to pan, cover
6. Braise in 325°F oven for 3-4 hours
7. Rest 15 minutes before slicing
8. Serve with pan juices
