Our Rose Beef tenderloin is a premium cut of our signature grass-fed veal.

Each whole tenderloin weighs 2-3 lbs. and includes both the short tenderloin (1-1.5 lbs.) and the butt tenderloin (1.5-2 lbs.), with the side muscle attached and silver skin intact.  

Cooking Suggestions

This versatile cut is ideal for roasting whole, slicing into petite fillets, or cutting into medallions. Grill, pan-sear, broil, or stir-fry for quick, delicious meals. For roasting, butterfly lengthwise, stuff if desired, and cook to medium-rare or medium to achieve optimal flavor and texture. However you prepare it, this Rose Beef tenderloin offers a naturally rich, satisfying bite.

Grilled Rose Veal Tenderloin Recipe:


Ingredients:

  • 2-3 lbs rose veal tenderloin
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and freshly ground black pepper

Marinade and Preparation:

  1. In a bowl, mix olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper.
  2. Trim any excess fat from the veal tenderloin. Pat the meat dry with paper towels.
  3. Coat the tenderloin completely with the herb marinade. Let it sit at room temperature for 30 minutes before grilling.

Grilling Instructions:

  1. Preheat your grill to medium-high heat (around 400-450°F).
  2. Clean and oil the grill grates to prevent sticking.
  3. Grill the veal tenderloin:
  4. Sear for 3-4 minutes on each side to create a nice golden-brown crust
  5. Reduce heat to medium or move to a cooler part of the grill
  6. Continue cooking until internal temperature reaches 135°F for medium-rare (about 10-12 minutes total)
  7. Remove from grill and let rest for 5-7 minutes to allow juices to redistribute.
  8. Slice against the grain and serve family style.
